Country-Italian Chicken & Potatoes

3 Tbsp. (45 mL) olive oil
2 cloves garlic, finely chopped
1 jar (630 mL) Ragú® Chunky Tomato, Garlic & Onion Pasta Sauce

2 lbs. (1 kg) boneless, skinless chicken breasts, cut into 1-inch cubes
4 medium potatoes, cut into 1-inch cubes (about 2 cups/500 mL)
2 medium green or red bell pepper, cut into large pieces
1 tsp. (5 mL) dried basil leaves, crushed



Heat 2 tablespoons (30 mL) olive oil in large skillet over medium-high heat and cook chicken with garlic, stirring occasionally, until chicken is thoroughly cooked. Remove chicken and set aside.


Add remaining 1 tablespoon (15 mL) olive oil to skillet, then add potatoes and green pepper. Cook over medium heat, stirring occasionally, 5 minutes. Stir in remaining ingredients. Bring to a boil over high heat. Reduce heat to low and simmer covered, stirring occasionally, 35 minutes or until potatoes are tender. Return chicken to skillet and heat through.


Try adding other root vegetables like carrots and squash.
