Chicken Margherita

Ingredients

1-1/2 Tbsp. (22 mL) olive oil
2 cups (500 mL) Ragú® Tomato & Basil Light Pasta Sauce
Ragú® Tomato & Basil Light Pasta Sauce
4 boneless, skinless chicken breast halves (about 1 lb./500g)
4 slices part skim or fresh mozzarella cheese (about 4 oz./125 g)
2 Tbsp. (30 mL) thinly sliced fresh basil leaves
4 oz. (125 g) penne pasta, cooked and drained

Directions

Heat olive oil in large nonstick skillet over medium-high heat and brown chicken, turning once, about 5 minutes.

Add Pasta Sauce and simmer covered 5 minutes or until chicken is thoroughly cooked. Top chicken with cheese, then let stand until cheese is melted, about 1 minute. Garnish with basil.

Serve with hot cooked pasta

For an added flavour kick, sprinkle garlic powder with the salt and pepper.
